Ingredients:
1.      Basmati rice(बासमती चावल)----2 cup.
2.      Water(पानी)---4 cup.
3.      Paneer(पनीर)---1/2 cup(Sliced).
4.      Carrot(गाजर)----1/2 cup(Sliced)
5.      Beans(बीन्स)----1/2 cup(Sliced)
6.      Capsicum(शिमला मिर्च)----1/2cup(Sliced)
7.      Green peas(हरा मटर)---1/4cup(Sliced)
8.      Potato(आलू)----1/2 cup(Sliced)
9.      Onion(प्याज़)---1 medium size  (finely chopped).
10.   Tomato(टमाटर)---1 medium size(finely chopped).
11.   Green Dhania(हरा धनिया)----1/2 cup
12.   Green chili(हरी मिर्च)----2 pieces.
13.   Ghee(घी)----1-2 tbs.
14.   Cashew nut(काजू)----8-10 pieces.
15.   Raisins(किसमिस)----8-10 pieces
16.   Cumin seeds(खड़ा जीरा ) ---- 1/4 tsp.
17.   Black Pepper(काली मिर्च)----1/4 tsp.
18.   Black Cardamom(बड़ी इलाइची)----1 piece
19.   Cloves(लौंग)----4-5 pieces
20.   Cinnamon(दालचीनी)---1/2 inch.
21.   Green cardamom (छोटी इलाइची)----2-3 Pieces.
22.   Salt(नमक)---As per your taste.
Method:
1.      Wash the rice and strain all water and keep it aside.
2.      Put ghee in a heated pan and add all the whole spices in it and cook for few seconds.
3.      Add sliced onion to it and cook for one minute.
4.      Add potato and beans slices and cook this for another 2 minutes.
5.      Now add all other vegetable slices with paneer except tomatoes and green coriander. Stir it well and cook it for 1 minute.
6.      Add salt and mix it well.
7.      Add dry fruits and mix it well.
8.      Now add rice and cook it for another 2-3 minutes. Then add water to it. Water must be double the quantity of rice.
9.      After one boil cook the rice for 10 minutes on low flame.
10.   Now add Tomatoes slices and green coriander and mix it well.
11.   Now switch off the flame and cover the Lid and leave it for 10 minutes.
12.   Vegetable Pulao is ready for serving.
